Fermentation/Winemaking - This sparkling wine is made as a Pétillante-naturel (or Pet-nat), which is to say it’s made in the “methode ancestrale” style. We pressed whole clusters into stainless steel and fermented the wine until it reached 15 grams of sugar. Then we chilled the wine down to stop fermentation and bottled the juice. As it warmed up, fermentation began again in bottle. Wine spent 4 months in bottle, and was disgorged by hand with no dosage. Aged in bottle.

Chenin Blanc

Chenin Blanc has something for everyone. This white wine grape variety from the Loire Valley of France is high in acidity meaning it can be used to make everything from sparkling wines to well-balanced dessert wines. Chenin Blanc makes lithe, dry summer whites and sparkling wines. It also offers oak-aged styles with similar flavors to Chardonnay. Thus, there really is a Chenin Blanc wine for every occasion. Apple, pear and honey are all commonly recognized flavors in chenin blanc from around the world.
